Tiramisu has a rather curious origin... Its name, which literally means 'pick me up' in Italian, is often interpreted as a reference to its revitalizing effect thanks to the caffeine from the coffee. However, another theory recounts that tiramisu may have been created in the 16th century by Italian chefs at the court of Florence, to celebrate the visit of the Grand Duke of Tuscany. They supposedly crafted this aphrodisiac dessert in honor of the duke, hoping to stimulate his energy and mood.
Here, we offer you a revisited version of this classic. Discover a subtle blend of the sweetness of mascarpone, the richness of speculoos cookies, and the explosion of flavors from our Spicy Raspberry Honey Soufflé®.
Ingredients, for 4 people:
- 15 speculoos cookies
- 4 eggs
- 2oz brown sugar
- 8,8oz mascarpone
- 4 teaspoons of Raspberry Espelette Honey Soufflé®
- 4 fresh raspberries
Preparation:
- Separate the egg whites from the yolks (reserving the whites), and using a whisk, whiten the yolks with the brown sugar.
- Incorporate the mascarpone into this preparation and mix until you obtain a homogeneous mixture.
- Whip the egg whites into stiff peaks, with a pinch of salt.
- Gently fold the whipped egg whites into the yolk, brown sugar and mascarpone mixture.
- Crumble the speculoos cookies.
- In individual glasses, alternate a layer of cookie and a layer of cream until the glass is full. Refrigerate the glasses for at least 12 hours.
- Once the resting time is over, place a teaspoon of Raspberry Espelette Honey Soufflé® on the surface of the tiramisu and a fresh raspberry.
